-3/4 cup olive oil (more if you do two baguettes)
-4 cloves garlic, smashed and peeled
-Two 3-to 4-inch rosemary sprigs, plus one tsp. chopped fresh rosemary
*Heat the oil, garlic and rosemary until it starts to sizzle. Let cool to room temp and strain.
-2 large heirloom tomatoes, 1/2 inch dice
-2 Tbsp. chopped mint
-1 1/2 tsp. salt
*Marinate above with 3 Tbsp. oil.
-One can cannellini beans, rinsed well and drained
-1/3 cup parmesan
-1-2 Tbsp. lemon juice
-1/2 tsp. black pepper
*Blend the above till smooth with 6 Tbsp. of the oil.
*Oil both sides of the slices and grill.
