This is our rendition of my friend Linda’s pasta salad. She made this for a party we attended on our vacation to Santa Fe in 2005.
*1# pasta (some fun shape)
*10 cloves or more garlic, minced
*1/4 cup olive oil
*1 pint cherry tomatoes, halved
*1/4 cup or more chopped kalamata olives
*1# fresh raw mozzarella, cut into 1/2 inch cubes
*1/4 cup or more of parmesan cheese
*1 cup fresh basil, chopped
*salt and pepper
-Cook pasta and toss with a small amount of olive oil to keep from sticking.
-Saute garlic lightly in olive oil. Do not let it brown!
-Toss in tomatoes, stir and turn off heat. Let this pan cool.
-Toss with all other ingredients and salt and pepper to taste.
