I think this original recipe is from the first Moosewood cookbook. My friend James and I made this a winter staple in college. Of course we always liked to make anything that included a bit of drink.
-5 cups thinly sliced onions (no red)
-clove garlic chopped
-6 Tbsp. butter
-1 quart stock
-1 Tbsp. tamari
-3 Tbsp. dry white wine
-1/2 tsp. dry mustard
dash of thyme
few dashes of white pepper
salt to taste
*Saute the onions and garlic, lightly-salted, in the butter in a soup pot on medium. Cook until lightly brown. Add mustard and thyme.
*Add remaining ingredients. Cook on low, covered for at least 30 minutes.
*Top with some toasts and cheese.
