After witnessing something tragic from the Aurora Bridge Roan and I walked home. I stuck him in front of PBS, opened myself a beer and started chopping every veggie in my frig. You only need three cups of veggies for this, unless you need chopping therapy too.
*1# sliced chicken, dusted with cornstarch
*2 Tbsp. peanut oil
*2 Tbsp. minced garlic
*2 Tbsp. minced ginger
*1 bunch sliced green onion, whites and greens divided
*1 cup onion, chopped
*2 cups broccoli, bite size
*1 cup sliced sweet pepper
mix and set aside:
*1 Tbsp. cornstarch
*1 cup broth
*1 Tbsp. (or to taste) red curry paste
*2 Tbsp. tamari or soy sauce
*salt and pepper
*1 Tbsp. rice vinegar
on high heat, in a deep skillet or wok heat HALF the oil.
saute HALF the garlic and ginger, stirring 15 seconds.
add veggies and cook 2 minutes or more, stirring.
remove veggies from pan.
heat remaining oil and add chicken.
cook for a minute and add remaining ginger and garlic, stir.
cook 3-5 minutes til done.
add veggies back to pan along with sauce, lower heat to medium and cook til thickened.
serve with rice.
