When in town on a Saturday morning, our home is filled with the sound of KEXP’s reggae show and Jeffrey making his buttermilk pancakes. The recipe makes about twelve 4-inch pancakes and is adapted from the Fields of Greens cookbook by Annie Sommerville.
2 Tbsp. butter
2 cups buttermilk, (at room temp. if you remember, we never do.)
1 1/2 cups flour
1 tsp. salt
2 tsp. baking soda
butter for pan
melt butter over medium heat in the griddle/skillet you will use for grilling pancakes.
in a bowl whisk the eggs, buttermilk and melted butter together.
in a seperate bowl combine the dry ingredients.
combine wet with dry ingredients and stir till dry is just moistened. DO NOT OVERMIX!!! batter should be lumpy, pancakes will be gummy if you overmix.
heat griddle on med-high with layer of melted butter. turn down to medium once heated. we use a 1/3 cup measuring cup to spoon it into the pan.
cook until bubbles break on top, 2-3 minutes, then flip them and cook until set and lightly browned, about 1 minute.
Great way to start a Saturday!
